Maple chicken pitta pocket

This recipe is a variation of the classic chicken sandwich. By replacing mayonnaise with Greek yoghurt, you’ll benefit from more protein to help you recover. The apple and dried cranberries also combine beautifully with delicious maple syrup and provide carbohydrates to replenish energy.

Method

In a bowl, combine all the ingredients except the pitta bread. Season with salt and pepper to taste. Stuff the inside of the pita with the chicken filling.

  • Half an apple, diced
  • 2 tbsp dried cranberries
  • 80 ml fat-free Greek yoghurt
  • 10 ml pure maple syrup
  • Salt and pepper
  • Fresh parsley, chopped
  • 1 white pitta bread cut down the middle
